tasting & tech notes

Our Extra Virgin Olive Oil is delicate, peppery and contains notes of the whole tree captured by the cold extraction process that our Frantoio Olives undergo. An excellent high quality table oil.

  • Planted over 25 years and left untouched until recently in 2021 when we finally decided to harvest this particularly bountiful vintage.

  • Sandy loam over clay, lightly acidic and of low salinity. Our grove is situated a kilometre away from the property's northerly perimeter of red clay cliffs that drop off into Westernport's shore line.

  • 2021 saw a fair amount of rainfall and was a record breaking year for olive growers across the nation.

  • An impressive indicator of quality is a low Free Fatty Acid (FFA) percentage. To be considered a fresh and well processed EVOO, the FFA must score a percentage less than <0.4%. Lauriston Produce’s Extra Virgin Olive Oil has scored an outstanding 0.17%!
